Chicken Tortilla With Yummy Sweet Corn And Creamy Avocado.

This southwestern flair will get you hankering for a soup. This chicken tortilla garnished with fresh chopped avocados and toasty Monterrey jack or cotija cheese.



A delicious slightly blended classic tortilla soup,together with a glass of wine and a whirls up into a cozy yet-simple one pot meal. 

The chicken with a little smoke and spiciness makes a up the perfect protein kick for every season.

Equipment.

  • Measuring Spoons.
  • Large Bowl
  • Soup Pots.
  • Knives.
  • Chop boards.
  • Blender.
Ingredients.
  • Vegetable oil.
  • Chopped onions.
  • 2 Table spoon of chili powder.
  • 1 Teaspoon of dried oregano.
  • 2 Teaspoon of ground cumin.
  • 3 Cloves of garlic.
  • 25 Ounce of Blended tomatoes.
  • 3 Ounce of chopped green pepper.
  • 1 Can of organic frozen corn kernel.
  • 10 Ounce of condensed chicken Broth.
  • Crushed Tortilla Chips.
  • 15 Ounce of black beans.
  • Chopped onions.
  • Shredded Monterrey jack cheese.
  • 2 Teaspoon of Ground cilantro.
  • 1 Lemon.
Preparation.
  • Place a large soup pot over a medium-high heat. Add 3 spoons of vegetable oil,allow till it's hot.
  • Once hot, add chopped onions and garlic and saute for 20 seconds -1 minutes till it's soft.
  • Add chili powder,tomatoes,garlic, some pinches of salt,cumin and water. Allow to boil and simmer for 10-15 minutes.
  • Stir in some corn kernel,cilantro,black beans and  chicken. simmer for another 10-15 minutes.
  • Once it's simmered properly. Ladle soup into serving bowls and top with tortilla chips,chopped green onion leafs,some cheese and then avocado slices.


Recipe Note:
  • You can chose to use vegetable oil or any oil of your choice,but i recommend vegetable oil because they are saturated fats and help burn down body fat faster than you can imagine!.
  • If you dont want your chicken too soft then you can reduce the timings. And be more calculative on the time you should include them in soup.
  • The amount of water you add determines the thickness or lightness of the soup.
