 Smokey Grilled Chicken Sharwarma.

This authentically-spiced wrap is perfect for launch and dinner,with cucumber prickle already prepared and kept over night together with your freshly prepared batch of garlic mayonnaise would just be the exact shawarma recipe for any occasion. 



Equipment:

  • knives.
  • chopboards.
  • baking dish
  • large bowl.
  • mixer
  • Measuring spoons.
  • trays
  • Dry griddle or sandwhich press.



Shawarma Spice Mix Ingredients.

  • ¼ of freshly cut parsley leaves.
  • ¼  teaspoon of ground of fenugreek 
  •  ¼ Teaspoon of ginger.
  • ¼ Teaspoon of turmeric. 
  • ½ Teaspoon of cayenne pepper.
  • 1 teaspoon of ground cumin
  • ½ Teaspoon of ground ginger cloves.
Chicken Shawarma Ingredients.
  • 1 batch of shawarma spice mix.
  • 120 ml of unsweetened yogurt.
  • 1 table spoon of lemon juice.
  • 2 mashed cloves of garlic.
  • 2 teaspoons of olive oil.
  • 1kg of boneless and stainless chicken.
Direction.
  • Prepare the shawarma mix by mixing all ingredients till there are incorporated into each other.
  • Combine the spice mix with yogurt,lemon juice,garlic and salt.Mix in a large bowl,place the chicken in the mixture and stir.
  • Refrigerate for 24 hours
  • Preheat the oven to 350ºF,in a large baking dish,spread one tablespoon of oil on it.
  • Take chicken out from mixture,scrap out excess marinade from the chicken with hands.
  • place chicken in baking dish,such that they over lap each other,then sprinkle 1 tablespoon of oil over it.
  • Bake uncovered for 1 hour until the chicken is cooked,you know it's cooked when you cut through it and there is no pink color inside. 
  • Place chicken on a cutting board and slice in bits. and mix in sauce pan,so that the chicken soaks up the spice mix.
  • On a large skillet coated with oil and preheated,place the sliced chicken and saute for 3-4 minutes until a golden brown color is obtained.
  • Spread some garlic mayonnaise over the bread-which you an find in any greek whole sale store or preferably in the center of bread.
  • Add some chopped vegetables,chicken,prickles and any other preferred spice. Once you have added all this, roll it up.
  • Toast on a flat sandwich press so that the bread gets slightly crispy and gets a golden brownish look.
  • Serve as is, or cut into smaller rounds or you can add extra mayonnaise for dipping.

Recipe Note:
  • The oven should not be heated to high,it could burn your chicken.Burnt chicken would not make your chicken sharwama taste great.
  • Remember to turn over your chicken for side to side,so that they cook up properly. 
  • Lastly remember to serve hot. They taste more delicious,but if you choose not to,they would still taste delicious.
